Coffee production in Guatemala is over 160 years old, and was once the leading exporter of coffee in the region. Coffee is still the largest export from Guatemala. Coffee grown here benefits from the natural altitude of the Sierra Madre de Chiapas mountain range and the rich volcanic soils that where produced by Central America’s two highest Volcanoes: Tajmulco and Tacaná.
Nueva Granada uses its own clear spring water to pulp the coffee cherries. The coffee is washed and graded in running spring water, then dried slowly and evenly on patios and in low heat dryers. When the beans are in parchment form, they are again graded and then stored in burlap bags in a special, dry, wood-line storeroom.
